Frittatas are a popular brunch dish and this one is especially delicious in the summer when you can utilize fresh kale and red bell pepper from the garden. When making this dish try and use a very high quality feta cheese if possible. Also, don’t over whisk the eggs. You can also create a low-calorie version using skim milk and turkey Italian sausage.
Frittata Ingredients:
- 2 large egg whites
- 6 large eggs
- ¼ tsp kosher salt
- ¼ tsp black pepper
- 1/3 cup 1% milk
- 4 oz. Italian sausage, cooked and crumbled
- 3 cups trimmed, thinly sliced kale
- 1 ½ tsp olive oil
- ½ cup chopped red bell pepper
- 1 ounce crumbled feta cheese
Preparation:
Preheat broiler to high. Combine egg whites, eggs, salt, pepper and milk and stir with a whisk. Heat a 9 inch cast-iron skillet over medium heat. Sauté’ kale in olive oil until tender. Layer in the sausage and bell pepper. Sprinkle with crumbled feta cheese. Carefully pour the egg mixture over the cheese. Cook over medium heat for 5-6 minutes or until the eggs are partially set. Finish in the oven under the broiler for 2-3 minutes or until browned or almost set.
